I took a health class last year and the teacher always said that. When you think about it, it kind of makes sense. I guess I could go down to a little more on the uncooked side when it comes to steak. I'm not sure about hamburgers though. I heard that with hamburgers you can have a greater chance of getting E. Coli than with steak. But that's just what I heard. I haven't really looked into the matter.

I don't get litooli fancy usually. My wife had just minced up a ton of garlic, and it was a thick steak... so I had to give it a try. Usually I don't do anything than salt & pepper my steak, since a correctly-cooked steak already has a ton of flavor.

I haven't tried the Jack marinade yet.. sounds interesting, I may give it a try on some chicken.

My in-laws make this Portuguese meat. It's pork loin marinated in about 20 gallons of wine and 9000 cloves of garlic. It's very good but you taste it for about 2 weeks after you eat it.

I have an overnight marinade I make with Worcestershire, fresh squeezed lime juice, and a bottled marinade I buy at Sam's -- can't remember the name but it comes in a large wine-type bottle with a beige label. If I'm out of the marinade I'll just skip it since the marinade is mostly Worcestershire anyway, but it adds some additional spices. It's especially good when I'm grilling carne azada, something we do often when we're cooking for a crowd.

Lately though, for regular steaks, I've been a fan of a spicy dry rub that I slightly modified from a recipe in a Weber's grilling book I bought. It consists of a lot of dried spices like red and black pepper, chili powder, kosher salt, minced onion and garlic, paprika, cumin, and marjoram leaves.

I'm with CG though, I hate strong add-on steak sauces (like A1) or marinades because they cover the steak's natural flavor. The only time I use A1 or something is when a steak is overcooked or otherwise just not very good.
